Roasted Tomato Sauce Recipe

Ingredients

  • Assorted Garden Tomatoes – 6 pounds
  • Large Cloves Of Garlic – 10
  • Extra Virgin Olive Oil – 1 cup
  • Kosher Salt – 1 teaspoon
  • Fresh Basil Leaves – 10

Directions

  • Preheat your oven to 375℉.
  • Take two rimmed baking sheets and line them with parchment paper.
  • Wash and core tomatoes.
  • Cut tomatoes in half and place in a bowl.
  • Peel and crush the garlic clove.
  • Add garlic and tomatoes to a bowl.
  • Add Italian olive oil to the bowl.
  • Toss and then pour tomatoes and garlic out onto the baking pan.
  • Season with salt and then roast it for around 40 minutes.
  • Leave it for 15 minutes.
  • Add garlic and roasted tomatoes to a food processor.
  • Pulse the mixture.
  • Add the remaining Italian olive oil and basil.
  • Puree until you get a combined and smooth mixture.
  • Check seasoning.
  • Add salt and pepper according to the taste if required.
  • Fit it with a lid after ladling the mixture into sterilized pint canning jars.
  • Now boil it in a canning pot submerged in water.

Bucatini Pasta

Ingredients

  • Salt – ½ teaspoon
  • Bucatini pasta – ¾ pound
  • Roasted tomato sauce – 2 cups
  • Parmesan cheese, shaved – ¼ cup
  • Extra virgin olive oil – ¼ cup
  • Fresh rosemary, coarsely chopped – 1 teaspoon

Directions

  • Take water and salt in a large pot.
  • Now boil it.
  • Add in bucatini pasta.
  • Now simmer it for 10 to 15 minutes.
  • Keep one cup of water reserved and strain pasta. You need this cup of water to thin sauce.
  • Now put one jar of roasted tomato in a large pan and warm it.
  • Add pasta water to thin your sauce.
  • Now add in cooked pasta and toss.
  • Blend flavors by cooking for two minutes.
  • Now check for seasoning.
  • Divide into four plates.
  • Now top each plate of pasta with a sprinkle of fresh rosemary, Parmesan cheese and a drizzle of extra virgin Italian olive oil.
